Healthy Breakfast Skillet Hash with Sweet Potatoes and Sausage

Breakfast Skillet Hash

Ingredients

Scale
  • 2 Tbsp grapeseed oil 
  • 1/2 large red onion, chopped 
  • 1 large red bell pepper, chopped 
  • 16 oz ground sausage, chicken or turkey 
  • 2 small sweet potatoes, cut into 1/2-inch cubes 
  • 1/8 tsp salt

  • 1/4 tsp red pepper flakes
  • 1/4 tsp ground black pepper
  • 1/2 tsp Italian seasoning, any kind

  • 2 cups fresh spinach
  • 
4 large eggs 

Instructions

  1. Preheat large ceramic non-stick deep skillet on high heat and swirl oil to coat. 
  2. Add onion and bell pepper. Stir fry for 3 minutes, stirring often. 
  3. Add ground sausage, chicken or turkey and cook until lightly browned. 
  4. Add in sweet potatoes, salt, red pepper flakes, black pepper, and Italian seasoning. Stir, cover, reduce heat to low. Cook for 12-15 minutes, stirring a few times. Potatoes should be cooked but firm. 
  5. Add spinach and gently combine. 
  6. Make 4 wells in the hash and crack an egg into each. Cover and cook for 5 minutes. Check a few times for desired doneness of the eggs. 
  7. Remove from heat and serve warm.
